Pumpkin Soup

Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. onion
  • 1/2 tsp. ginger
  • 1 Tbsp. flour
  • 2 cups prepared pumpkin
  • 2 cups chicken stock
  • 2 cups milk
  • 1-2 carrors
  • 1 zucchini
  • salt & pepper to season

Instructions

Prepared Pumpkin: remove the seeds from the pumpkin and cut into chunks. Boil or steam the pumpkin pieces until soft. Mash or use a food processor to make pumpkin into a pulp.

Saute butter, onion, ginger, and optional vegetables

Stir in flour

Add pumpkin and cook 5 minutes.

Gradually add chicken stock and milk and season with salt and pepper
