Our Crockpot Pinto Beans are easy, flavorful, and made from scratch using simple pantry ingredients. Perfect as a side dish for BBQs, taco nights, meal prep, or as a hearty main dish.
Ingredients
- 2 cups pinto beans (soaked overnight)
- 2 tablespoons olive oil
- 1 tablespoon garlic (chopped)
- ½ cup sweet onion (chopped)
- 2 cups low-sodium chicken broth
- 1 cup bean water
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- ½ teaspoon sea salt
Instructions
Soak the pinto beans overnight in water.
Heat your crockpot on the sauté setting. Once heated, add the olive oil to the slow cooker. Add the onions and sauté for 5 minutes until tender. (If your slow cooker or crock pot does not have a sauté setting, follow these steps on the stovetop with a skillet, then add to the slow cooker.)
Add the garlic to the onions and cook until fragrant.
Add the pinto beans, cumin, oregano, and salt to the beans.
Use a slotted spoon to mix the ingredients together.
Add the chicken broth and bean water to the beans. Set your slow cooker to low. Cover and cook for 6 hours.
Once done, taste and season if needed, and serve hot.
