Authentic Mexican Refried Beans Recipe

Authentic Mexican Refried Beans Recipe

Ingredients

  • 2 cups pinto beans (soaked overnight)
  • 1 tablespoon lard (or vegetable shortening)
  • 2 cups low-sodium chicken broth (or vegetable broth)
  • ½ cup sweet onion (minced)
  • 1 tablespoon fresh garlic (minced)
  • 1 teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon table salt
  • Reserve 2 cups of the water the beans were soaked in for cooking.

Instructions

Add the lard to a heated skillet.

Add the onions to the lard and cook for 3-4 minutes until tender

Add the minced garlic to the onions with cumin, salt, and oregano.

Mix the onions with the seasoning.

Add the pinto beans to the skillet

Stir the beans together with the onions and seasoning.

Pour the chicken broth over the beans and simmer for 1 hour on low heat.

Add 1 cup of the water the beans were soaked in to the beans and simmer for an additional 45-60 minutes.

Once done, use a potato masher to mash the beans into the broth.

Stir to combine and simmer for an additional 2 minutes. Add additional water to the beans if the consistency is too thick.

Remove from heat and serve.
