Ingredients

  • 1 small yellow onion, finely diced
  • 1 clove garlic, minced
  • ½ Granny Smith apple, peeled and finely grated
  • 2 tbsp Vegetable oil
  • The "Spice Kit" Aromatics:
  • 1 ½ tbsp Mild curry powder (includes Turmeric & Ginger)
  • 1 tbsp Sweet Paprika
  • 1 Cinnamon stick (whole)
  • 1 Star Anise (whole)
  • 1/8 tsp Ground Cloves (or 2 whole cloves)
  • The Sauce Body:
  • 1 cup Tomato ketchup
  • ½ cup Water (or beef broth for extra richness)
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Honey or brown sugar
  • Salt & Black Pepper to taste

Instructions

Sauté the Base: Heat oil in a medium saucepan over medium-low heat. Add the onion and garlic, sautéing until translucent (about 5 minutes). Stir in the grated apple and cook for another 2 minutes until softened.

Bloom the Spices: Add the curry powder, paprika, cinnamon stick, star anise, and cloves to the pan. Toast the spices in the oil for 60 seconds until fragrant, stirring constantly to prevent burning.

Simmer: Pour in the ketchup, water, vinegar, and honey. Stir well to combine. Reduce heat to low and simmer gently for 15–20 minutes. The sauce should thicken slightly as the whole spices infuse.

Refine: Remove and discard the cinnamon stick, star anise, and any whole cloves.

Finish: Use an immersion blender to puree the sauce until completely smooth and velvety. Season with salt and pepper to taste.

Serve: Slice grilled or pan-fried Bratwurst into bite-sized rounds. Drench with the warm sauce and finish with a light dusting of extra curry powder on top.
