Ingredients
- 1 lb sausage (I used kielbasas)
- 1 tsp dried oregano
- 1 tsp dried thyme
- pinch of crushed red pepper flakes
- 1 red or white onion, finely chopped
- 1 small cabbage, thinly sliced (about 4 cups)
- 24 oz diced tomatoes (I used fire roasted)
- 4-5 cups chicken stock
- 1 1/2 cups white beans (I used cannelini)

In a large dutch oven or soup pot cook the ground pork over medium heat until it's slightly browned, but not totally cooked through. Add the herbs and crushed red pepper flakes. Stir in the onion and cook for about 5 minutes longer.

Add the cabbage, tomatoes, 4 cups broth and beans. Season with plenty of salt and pepper and bring to a low boil. Reduce the heat to medium low and simmer until the flavors have a chance to meld together. About 20 minutes. If the soup is too thick add a bit more broth as necessary.

Taste for seasonings and adjust as needed. Serve warm with some sourdough bread and a glass of red wine.
