Breakfast Fried Rice
Ingredients
- 4 cups cooked rice, refrigerated overnight
- 1 can spam
- 1 lb bacon, cut into lardons
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 1/2 red pepper, chopped
- 4-6 mushrooms, chopped
- pepper
Instructions

Cut bacon into lardons, add to wok. Cook bacon until crispy, remove to a plate. Drain bacon grease.

dice spam, add to fry pan, cook until browned on all sides. remove to a plate.

add chopped onion, green & red peppers to fry pan. saute over medium heat until tender. turn off heat and add sliced mushrooms.

add rice to wok, breaking up clumps. cook rice over medium heat until warm and no more clumps of rice.

Add onion, peppers, mushrooms, bacon, spam to rice in wok.

season with ground black pepper. continue cooking until rice is heated through.

serve with soy sauce and a cooked egg on top.
