THAI CABBAGE SALAD

Ingredients

  • 1 tsp grated garlic (dressing)
  • 1 tsp sambal oelek (dressing)
  • 1 tsp fish sauce (dressing)
  • 3 Tbsp fresh lime juice (dressing)
  • 2 Tbsp peanut oil (dressing)
  • 1 Tbsp coconut aminos (dressing) - substitute soy sauce
  • 2 cups shredded cabbage
  • 1 cup thinly sliced romaine lettuce
  • 3/4 cup chopped sugar snap peas
  • 1/2 cup shredded carrot
  • 1/2 cup thinly sliced red bell pepper
  • 1/3 cup chopped lightly salted peanuts
  • fresh cilantro

Instructions

In a large mixing bowl, add the cabbage, romaine, sugar snap peas, carrot, red bell pepper and peanuts.

Drizzle with dressing and season with kosher salt (see notes) if using coconut aminos. Toss to combine.

Serve sprinkled with chopped cilantro.
