Secret Beef Jerky Recipe

Ingredients

  • 1 london broil, thick
  • 10 oz soy sauce
  • 1 Tbsp brown sugar
  • 1 oz course ground black pepper
  • 1 tsp liquid smoke
  • 1 oz garlic salt
  • 1 oz red chili pepper flakes
  • 6 oz white vinegar

Instructions

In a large sauce pan, mix brown sugar and soy sauce until sugar is disolved.

In a bowl mix liquid smoke, garlic salt, chili pepper, black pepper, and vinegar.

Add ingredients from the bowl to the sauce pan and heat on medium. Do not boil.

Cut the meat lengthwise (against the grain) in 1/4 inch strips.

Dip the strips in the jerky marinade then put them in to the freezer bags. Put one bag inside the other to avoid leakage and use a bowl to support the bags as you fill them.

Pour remaining marinade in the bags and seal them.

Place the bags in the refrigerator for 24 hours, turning the bags occasionally.

Put the jerky on a broiling pan and dry it at 100° F for 6 to 7 hours with the door ajar. If your oven will not heat at 100° F , use the lowest setting and shorten the drying time. Be careful to not dry it out too quickly.

Store the jerky in a sealed bag or container.
