Ingredients
- 1 1/2 cups water
- 1/2 tsp salt
- 1/2 cup uncooked farro, rinsed and drained
- 1/2 large cucumber, seeded and diced
- 1/3 cup diced roasted red peppers
- 1/4 cup cumbled feta cheese
- 1/4 cup diced sundried tomatoes
- 1/3 cup red onion, diced
- 1/8 cup fresh parsley, finely chopped
- 3 Tbsp olive oil
- 1 Tbsp freshly squeezed lemon juice
- 1 Tbsp red wine vinegar
- 1/4 tsp dried oregano
- pinch of garlic powder
- pinch of salt
- pinch of black pepper
Instructions

Bring water and salt to a boil. Add farro and cook for 30 minutes or until water is absorbed

Let farro cool for at least 10 minutes.

Transfer farro to a large mixing bowl, and add in remaining ingredients, including the vinaigrette. Toss until combined.

TO MAKE THE GREEK VINAIGRETTE: Whisk all ingredients together until combined. Use immediately.
