Rivian's Chicken

Ingredients
- 1 cup rice
- 1 Tbsp butter
- 1 pkg dried white beans (great northern or cannellini) prepared according to pkg, or 3 15-ounce cans of cannellini beans, rinsed and drained
- 1 can chicken soup (cream of?)
- 2 1/2 - 3 lbs cut up chicken
- 1 env onion soup mix
- 1/2 cup chopped green pepper
- 1 jar (2 oz) pimiento, drained and chopped
- 2 cups water
Instructions

Lightly grease 9 x 13 pan. Pour in rice. Add onion soup add stir to combine.

Saute green pepper & celery in butter until limp.

Spoon over rice.

Spread pimiento evenly over rice.

Combine soup and water. Mix well. Put 3/4 over rice.

Place chicken pieces over rice.

Pour remaining soup on top of chicken. Sprinkle with paprika.

Bake uncovered at 350° F for 1 1/2 hours
