TUSCAN PASTA SALAD

Ingredients

  • 16 oz bowtie pasta cooked and drained in cold water
  • 7 oz sun-dried tomatoes in oil, drained
  • 1 cup spinach
  • 1/4 cup basil, chopped
  • 1/2 cup feta cheese
  • 3/4 cup olive oil
  • 2 Tbsp red wine vinegar
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp dry oregano
  • 1 tsp dry basil
  • 1 clove garlic, grated
  • black pepper, to taste
  • artichokes, roughly chopped

Instructions

In a large bowl combine pasta, sun-dried tomatoes, artichokes, olives, spinach, basil, and cheese. Toss until combined.

To make the dressing: In a small bowl whisk olive oil, vinegar, salt, sugar, oregano, basil, garlic and salt and pepper.

Drizzle the dressing over the pasta salad and serve
