Stuffed Mushroom Florentine

Ingredients

  • 12 large or 36 medium fresh mushrooms
  • 1 tablespoon melted butter
  • 1 tablespoon olive oil
  • 1 bunch fresh spinach
  • 1 cup ricotta cheese
  • 1 clove garlic, minced
  • 1/3 cup grated parmesan
  • pinch of freshly ground pepper

Instructions

Preheat oven to 400° F

Brush mushrooms, remove stems and mince.

Mix melted butter and oil and brush cap thouroughly.

Wash and drain spinach, remove stems and chop leaves finely.

Combine spinach and ricotta cheese, garlic and pepper.

Spoon mix into caps and top with parmesan.

Bake in hot oven for 10 minutes.
