Spanish Rice

Ingredients

  • 3 Tbsp Vegetable oil
  • 1 1/2 cups uncooked long grain rice
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped green bell pepper
  • 1 teaspoon salt
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoon black pepper
  • 1 cup. plus 1/2 cup finely chopped red onion
  • sliced scallions for garnish

Instructions

Heat the oil in a skillet and saute the rice until golden brown. Add the vegetables and seasoning and continue to saute for 1-2 minutes longer.

Add the water or broth and the tomato sauce, and bring to a boil. Cover and simmer for 15 minutes.

Remove the rice from the heat and let stand 3-4 minutes, still covered
