Asian Tuna Kabobs

Ingredients

  • 1/3 cup reduced sodium soy sauce
  • 1/3 cup driy sherry or rice wine
  • sugar
  • 1 Tbsp fresh giner, grated
  • 1 Tbsp chopped garlic
  • 2 teaspoons sugar
  • olive oil, for sauteing
  • 1 large red pepper cut into squares
  • 2 chinese eggplants
  • 8 bamboo skewers, soaked in water
  • salt and freshly ground black pepper

Preheat gril high

Combine soy sauce, sherry, sesame oil, ginger, garlic and sugar in a large bowl. Add tuna, scallions and red pepper and toss to coat. Marinate for 15 minutes in the refrigerator.

Remove tuna, scallions and red pepper from marinade and set aside. Toss eggplant in marinade and let sit for 3 minutes. Remove eggplant and set aside with other ingredients.

Alternate tuna, scallions, red pepper, and eggplant on skewers.
