Blue Cheese Potatoes

Ingredients

  • 1-1/2 lbs. small red potatoes, steamed, cut into quarters
  • 2 Tbsp butter
  • 3 ounces blue cheese, crumbled
  • 1/3 cup whipping cream
  • 1 clove garlic
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste

Instructions

Saute the potatoes in the butter in a 10" skillet over medium-high heat until the potatoes start to brown.

Add blue cheese, whipping cream and garlic and mix gently.

Cook over medium-low heat for 5 -8 minutes or until a thick cream sauce forms, stirring constantly.

Season with salt and pepper. Spoon into an ovenproof serving dish. Sprinkle with parmesan cheese.

Broil for 2 minutes or until cheese is brown
