Ingredients
- 1 large onion, chopped
- 1 1/2 lbs ground beef
- 4 garlic cloves, minced
- 1 1/2 tsp dried oregano
- 1 1/2 tsp ground cumin
- 1 tsp salt
- 2 Tbsp chili powder (I used less and it was still spicy)
- 1 (14 oz) can stewed tomatoes
- 2 cups fresh or fozen corn
- 1/2 cup chopped fresh cilantro
- 1 1/2 cups grated monterey jack pepper cheese, divided
- 1 1/2 cups grated sharp cheddar cheese, divided
Instructions

To prepare beef filling, combine onion, ground beef, garlic, oregano, cumin, salt and chili powder in a large skillet; sauté until beef is browned.

Add tomatoes and corn and heat through. Remove from heat and stir in cilantro.
