Ingredients
- 2 apples, one honey crisp and one granny smith
- 1 Tbsp dijon mustard
- 1 Tbsp apple cider vinegar
- 1 Tbsp lime juice
- 1 tbsp honey
- 1/3 - 1/2 cup extra virgin olive oil

Whisk together ingredients, starting with the mustard, vinegar, lime juice, and honey and then drizzling in the oil until well emulsified.

Julienne the apples — if you have a mandoline, slice on the thickest setting and then cut the slices into strips.

Toss in the dressing until well coated. Season with salt. Let chill in the refrigerator until ready to serve.
