Sausage & Kale Stew

Ingredients

  • 1 lb hot Italian sausage
  • 1 onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1-2 cloves garlic, peeled and minsed
  • 4 cups chicken broth
  • 1 cup cream
  • 5 golden potatoes
  • 1 bunch kale, chopped into bit size pieces
  • parmesan rinds, or a Tbsp of parmesean cheese

Instructions

In a large pot, brown sauage. Remove to paper towels. Discard grease.

pierce potatoes with fork, bake in oven or microwave until cooked. Set aside to cool. When cool, remove skins.

heat a little olive oil in the same pot. Add onion, carrot, celery and garlic. Saute until tender.

Season the vegetables with pepper, crushed red pepper, oregano.

add chicken broth, cream. Add potatoes and sausage. Bring just to a boil and reduce heat to a simmer.

Add kale and cook until kale is tender.
