Thai Basil & Pork Stir Fry

Ingredients
- 1 lb pork, thinly sliced
- 3-6 ginger slices
- 1clove garlic, sliced
- 1-2 red, yellow, or orange peppers, sliced
- 1 onion, sliced
- 1/2 - 1 Tbsp cornstarch
- 2 cups basil
- mushrooms, quartered
- cherry or grape tomatoes, halved
- 1/4 cup fish sauce (sauce)
- 1/4 cup water (sauce)
- 1 Tbsp soy sauce
- 2 Tbsp brown sugar
- thai red peppers (substitute jalapeno), optional
Instructions

Sprinkle the sliced pork with some cornstarch and salt. Mix well.

Heat 1Tbs of canola oil on high heat. Once heated add garlic, ginger and some dried red chili flakes (to taste) and stir fry for about 30 seconds. Careful not to burn. Remove garlic and ginger

Add the sliced pork and stir fry until pork is almost cooked through. Set aside.

Stir fry peppers and onions. Set aside.

Stir fry tomatoes and mushrooms.

Add sauce, cook until slightly reduced.

Return pork, vegetables, and basil to the wok. Simmer until sauce is at desired consistency.

Server over jasmine rice.
