Ingredients

  • 3 lbs ground beef
  • 4 yellow onions, peeled and diced
  • 4 cloves garlic
  • 2 (28oz) Cans whole tomatoes
  • 2 (14 oz) cans roasted tomatoes
  • 6 carrots, roasted
  • 1 bag Brussels sprouts, roasted
  • 1 bag spinach, sauteed
  • parmesan, to taste
  • 1/2 lb basil
  • olive oil, for sauteing
  • 1 qt chicken stock

Instructions

Roast carrots, sprouts in 350 degree oven for 45 minutes

Sweat garlic and onions in a saute pan until translucent.

Saute spinach in a separate pan

grind the roasted carrots, sprouts and spinach and set aside

Add the beef to the onions and brown off. Add the tomatoes (crush the tomatoes by hand as you add them to the pot) and chicken stock.

Cook over medium heat until thick. Add the ground veggies and cook for 10 more minutes. Blend with hand blender. Season with salt and pepper to taste
