Asparagus Tart

Ingredients

  • 1 9x9.5" puff pastry sheet, thawed
  • 6oz asparagus
  • 2 Tbsp kalamata olives, pitted and chopped
  • 3 Tbsp olive oil
  • 2 scallions, sliced thin
  • 2 garlic cloves, minced
  • 1/4 tsp lemon zest (or more to taste)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 oz goat cheese, softened

Preheat oven to 400.

Grease the bottom of an 8 inch square pan and place in the center of the puff pastry. Trace around the edge of the pan with a knife cutting about 1/8 in but not completely through the pastry. Put pie weights in the pan. Cook at on lower middle oven rack for 20 minutes.

Remove pan and weights. Rotate baking sheet and bake for 5- 10 minutes more until dark golden brown. Let pastry cool 30 minutes.

Meanwhile, mix asparagus, olives, 1 T oil, scallions, garlic, lemon zest, salt and pepper.

When the pastry is cool, spread goat cheese evenly on it. Top with asparagus mixture.

Crumble the remaining goat cheese over asparagus.

Bake on top oven rack for about 10 -15 minutes.

Let cool 15 minutes. Drizzle with the remaining exta 1 T olive oil. Cut into four pieces and serve.
