Chilled Peanut Noodles

Ingredients

  • 12 oz linguine
  • 4 Tbsp sesame oil
  • 1/2 cup green onions, chopped
  • 3 Tbsp minced fresh garlic
  • 1 Tbsp fresh ginger, minced
  • 3 Tbsp honey
  • 1/4 cup creamy peanut butter
  • 1 Tbsp soy sauce
  • 1-2 Tbsp rice wine vinegar
  • 1 Tbsp garlic chili paste (sambal oelek)
  • 2 Tbsp peanuts

Instructions

cook pasta in a large pot of salted water according to package instructions

drain and return to pot. Add 2 Tbsp sesame oil and toss to coat and set aside.

Combine remaining 2 Tbsp sesame oil, green onions, garlic, ginger, honey, peanut butter, soy sauce, vinegar, and chili-garlic sauce in the bowl of a food processor and pulse until combined, but slightly chunky. If sauce is too thick, add a little sesame oil or vegetable stock to think it out.

Pour sauce over pasta and toss well. Place in refrigerator to chill.

Transfer to plates, add protein if desired, and garnish.
