Cream of Tomato Soup
One of my favorites... how come I don't cook it very often?

Ingredients
- 2 cups Peeled diced ripe tomatoes
- 3 Tbsp Butter
- 1 tsp Salt
- dash Pepper
- 1 tsp Baking Soda (Optional)
- 1 cup half and half
- 1/2 cup Dry white wine or chicken broth
- 2 Tbsp Flour
Instructions

Blanch tomatoes to easily remove tomato skins

Simmer tomatoes in butter for 5 min.

Whirl tomatoes in blender to smooth

Sprinkle in flour, salt, pepper, blending

Cook for 2 or 3 minutes, stirring constantly

Add soda and half and half. Cook until slightly thickened.

Stir in wine or broth. Simmer til heated through
