Gyros (2 1/2 lbs. meat)

Makes two "meat-loaf" size loafs. You may use all ground lamb, or a combination of half lamb and half ground chuck. I prefer the combo.

Gyros (2 1/2 lbs. meat)

Ingredients

  • 1 1/4 lb lean ground chuck
  • chopped fresh cilantro
  • 2 Tbsp oregano
  • 1 1/2 Tbsp onion powder
  • 1 Tbsp garlic powder
  • 1 tsp thyme
  • 3/4 tsp salt
  • 11/4 lb ground lamb

Instructions

Pre-heat oven to 350° F

Blend meats in food processor

using your hands, mix meats and spices. The completed mixture needs to be stiff and dense so don't worry about over mixing

Place meat mixture in meatloaf pan, packing firmly.

Smooth surface, drizzle with oil and place in oven

Bake for approximate 75 minutes. Temperature should register 175-180° F .

Let rest for 15 minutes before slicing thinly
