Spanish Rice (The Joy of Cooking)

Ingredients

  • 2 slices bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 clove garlic
  • 1 cup long-grain white rice
  • 1 3/4 cups chicken stock
  • 1 cup chopped drained canned tomatoes
  • 1/2 tsp sweet or hot paprika
  • 1/4 tsp ground black pepper

Preheat oven to 350 degrees

Combine bacon, onions, green peppers, and garlic in an ovenproof skillet or casserole. Cook, stirring, over medium heat until the onions are golden, about 5 minutes.

Add rice, stir until well coated.

Add chicken stock, tomatoes, paprika and black pepper. Bring to a boil. Stir once, cover, and bake until the stock is absorbed and the rice is tender, about 25 minutes.

Uncover and let stand for 5 minutes before serving.
