HOMEMADE CROCKPOT BAKED BEANS

Joanne Taylor of Windsor sent in the following recipe for Anne from Columbia, who requested some "family-favorite crockpot dishes." She writes: "Great for holidays in the summer, easy, good and they freeze well!"

Ingredients

  • 1 lb dry navy pea beans
  • 1 cup ketchup
  • 1 cup packed light brown sugar
  • 1 Tbsp salt
  • 1/2 cup butter (1 stick)
  • 2-4 Tbsp molasses
  • 3 cups water
  • 2 slices rendered salt pork or bacon

Instructions

Rinse and pick though the beans. Boil beans slowly for 2 hours until soft.

Place beans and rest of ingredients in crockpot with 3 cups of water. Stir. Cook on low overnight, stirring a couple of times during the night. If needed, add more molasses to taste during or after cooking.
