Tuna and White Bean Salad

Ingredients

  • 1 7oz can of tuna (water)
  • 3/4 cup red onion, thinly sliced
  • 1/2 cup celery, thinly chopped
  • 1 15.5oz can white beans (cannellini), drained and rinsed
  • 1 Tbs olive oil
  • 1 Tbs red wine vinegar
  • 1 Tbs chopped Italian parsley
  • 8 cups Arugula

Instructions

Place the tuna in a large bowl and break up with a fork.

Stir in onion, celery, beans, salt & pepper.

Add oil, vinegar and

parsley and toss to gently combine.

Place arugula in bowl and top with tuna salad
