Greek-style Pork

Ingredients

  • 1 lb boneless pork tenderloin
  • 1/2 medium onion, cut into wedges
  • 1/2 green bell pepper, diced
  • 1 14.5 oz can diced tomatoes
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp ground cinnamon
  • 2 oz feta cheese
  • whole wheat pita bread

Instructions

Trim any fat from pork and cut into 1/2 inch cubes.

In a large nonstick skillet sprayed with cooking spray, brown the pork, onions and pepper. Drain off fat.

Stir in undrained tomatoes, oregano, salt,pepper and cinnamon. Bring to a boil. Reduce heat, cover and simmer for 25 minutes.

Add feta

Add feta cheese over pork and serve immediately
