Beef Medallions with Sauteed Mushrooms

Ingredients

  • 1 tsp dark, sesame oil
  • 1 lb beef loin, trimmed of all fat and cut into 2oz medallions
  • 1 lb mixed mushrooms (button, shitt
  • 2 sprigs of fresh thyme
  • 2 T green peppercorns
  • 1/2 cup beef broth

Instructions

Coat a large nonstick skillet with the sesame oil and place over high heat. Season the beef medallions with salt and pepper. Cook three minutes on each side. Transfer the medallions to a plate and tent with foil to keep warm.

Using the same pan, add the mushrooms, thyme and green peppercorns. Add one tablespoon of the beef broth and saute the mushroom, adding stock 1 tablespoon at a time as needed to prevent the mushrooms from sticking. Remove the thyme sprigs.

Return medallions to the pan to warm through. Serve the mushroom sauce over the medallions.
