Chicken with Avocado and Rice

Ingredients

  • 1 lb chicken
  • 2 cups uncooked arroyo rice
  • 1 onion, sliced
  • 8 cups chicken broth
  • 4 cloves garlic, minced
  • 2 avocados, peeled and sliced
  • 1 cup white wine
  • salt & pepper to season
  • 2-3 Tbsp olive oil

Instructions

bring chicken stock to boil

in a separate skillet, cook chicken in olive oil

Remove chicken from oil

Add garlic, cook 30 seconds

Add rice and toast 3-5 minutes

Add wine and simmer 1-2 minutes

Begin Adding boiling chicken stock using ladel

Cook and continue to add broth as needed until rice is cooked (cook off broth)

Add chicken and onions for last several minutes

Remove from heat

Add cheese and avocado
