German-Style Potato Pancakes

Ingredients

  • 5 red bliss potatoes, peeled and grated
  • 2 Tbsp onion, chopped
  • dash of salt and pepper
  • 2 Tbsp flour
  • 3 eggs

Instructions

In a medium bowl, combine the grated potatoe, diced onion, salt, pepper and flour. Mix well.

Add the eggs to the mixture, melding the ingredients with your hands to create an even consistency.

Preheat a saute pan with vegetable oil and ladle the potato pancake mixture (about four ounces for each pancake) into the pan.

Lower heat to medium and let pancakes grill for about four minutes on each side, until golden brown.

Serve hot with sour cream or applesauce.
