Mac & Cheese from the King Fish Cafe

Ingredients

  • 1 cup diced green pepper
  • 1 cup diced yellow onion
  • 1 Tsp salt
  • 1 Tbsp pepper
  • 2 Tbsp butter, to saute above ingredients
  • 3 eggs
  • 1/4 cup milk
  • 2 cups heavy cream
  • 1 can cream of mushroom soup
  • 2 1/2 cups dry macaroni, cooked in salted water until al dente
  • 10 oz grated sharp cheddar cheese
  • 10 oz grated pepper jack cheese

Instructions

Sauté the first 4 ingredients in clarified butter until they are softened. Set aside.

Slightly beat the eggs to break them up. Add the milk, heavy cream, and cream of mushroom soup the egg mixture and stir.

Stir in the peppers/onions and half of the cheese mixture.

Pour into a dutch oven over the cooked macaroni noodles.

Cover the mixture with the remaining cheese. Cover and bake at 350 for 1 hour.
