Gretchen's Mashed Potatoes
Ingredients
- 5 lb potatoes
- 1/2 stick butter
- 1 small tub sour cream
- 8 oz cream cheese
- salt, to taste
Instructions
potatoes, peel and cut in 1/2 or 1/3rds and cook in pressure cooker or else do them in a regular pot of boiling water just like you normally would until they are able to be mashed.
drain
add butter (depends on how many potatoes you make....for a 5 lb bag of potatoes you should use probably 1/2 to a full stick of butter
add sour cream (for a 5 lb bag probably need a small tub of sour cream)
add cream cheese (for a 5 lb bag probably need an 8 oz block of cream cheese or equivalent tub....you can also use the cream cheese with chives and it's even better!)
add salt (to taste)
use mixer to beat them
once they taste "right", put them in an oven-safe dish. you can choose either a deep or shallow baking dish....shallow = more crispy edges (which i prefer)
refrigerate them for 1 hr (or more) [if making ahead of time they can be in the fridge overnight, etc]
when you're ready, you can bake them for 45 min-1hr (until edges get golden) and serve them!
