Asian noodle salad with peanut butter dressing

This spicy-yet-slightly-sweet vegetarian noodle salad is flavored with an Asian-style dressing of dark sesame oil enriched with peanut butter. Fresh lime and spicy chili paste enliven the dressing further.

Ingredients

  • 12 oz Chinese-style wheat noodles
  • 2 Tbsp esame oil, plus more for drizzling on just-cooked noodles
  • 1/2 cup peanut butter
  • 1/4 cup lime juice (approx juice from 2 limes)
  • 1 Tbsp Asian-style chili paste
  • 2 Tbsp sugar
  • 1 cup firm tofu, cut into small cubes
  • 1 cup bean sprouts
  • 1 cup finely shredded carrots
  • fresh cilantro leaves

Instructions

Cook noodles in a large pot of salted boiling water. Drain and rinse in cold water. Toss noodles in a few dashes of sesame oil to prevent sticking.

Mix peanut butter, lime juice, the 2 tablespoons of sesame oil, chili paste and sugar well in a small bowl. Combine tofu, bean sprouts, carrots and noodles in a large serving bowl; pour peanut sauce over all. Toss well to coat. Garnish with cilantro.
