Bowtie Chicken Pasta

Also good served cold as a pasta salad

Ingredients

  • 1/2 cup olive oil
  • 3 cloves garlic, minced
  • 2 med onions, diced
  • 2 lbs boneless chicken, cubed
  • 1 sm can black olives, sliced & drained
  • 2 sm jars (6.5 oz) marinated artichokes w/ juice
  • 2 sm jars (7 oz) roasted red pepers w/ juice, sliced into thick strips
  • 1 tsp basil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 16 oz pasta

Instructions

brown garlic in olive oil

add onions and saute

add chicken and cook

add remaining ingredients

simmer for 45 minutes

cook pasta and drain

combine pasta and sauce
