Spicy Corn and Black Beans

A nice alternative to Mexican rice as a side dish

Ingredients

  • 1 Tbsp oil
  • 1/2 cup chopped onion
  • 1 can (11 oz) corn
  • 1 can (15 oz) black beans
  • 1 can (4oz) green chilies
  • 1 tsp cumin
  • 1/8 tsp crushed red pepper flakes

Instructions

Heat oil in a large sauce pan.

Add onion and cook until onion is softened.

Add remaining ingredients and cook until thoroughly heated, stirring frequently.
