  • rib roast (bone-in)

Pre-heat oven to 425° F

bake roast for 15 minutes in 425° F oven.

Reduce heat to 325° F .

For rare: bake 22 to 26 minutes / pound

For medium: bake 26 to 30 minutes / pound

For medium-rare: Remove from oven when thermometer reads 140° F .

7

For medium: Remove from oven when thermometer reads 155° F .

Let stand 15 minutes, covered loosely with aluminum foil.
