Fried Chicken / Potatoes and Gravy

Ingredients
- flour
- pepper
- salt
- 1/4 cup butter
- 1/4 cup shortening
- eggs
- milk
Instructions

Beat eggs in a bowl.

Combine flour, pepper, salt.

Dip chicken in egg mixture, then flour mixture. Repeat.

Meanwhile, boil potatoes.

Fry chicken in melted butter and shortening. Remove fried chicken to a cooling rack. Don't pile chicken up, it can cause the chicken to be less crispy.

Add flour extra flour to the oil, thin with the water from potatoes and milk.
