Southwest Scalloped Potatoes

Ingredients
- 1 tbsp softened butter
- 1 tsp minced garlic
- 3 lbs potatoes, peeled and sliced 1/8" thick
- 3/4 tsp kosher salt
- 1/2 tsp coarse ground black pepper
- 1/2 tsp crushed red pepper flakes
- 1/2 cup grated romano or parmesan cheese (12 oz)
- 1 pint heavy whipping cream
- 2-3 jalepeno peppers (red, orange, & green), chopped finely
Instructions

Spread butter over bottom and sides of pan.

Sprinkle minced garlic.

Layer of 1/2 of potatoes.

Mix salt, peper, red pepper and sprinkle a little over the potatoes.

Sprinkle 1/2 of jalapenos over potatoes.

Sprinkle 1/2 of cheese over potatoes.

Repeat.

Pour whipping cream over potatoes.

Cover and bake at 350° F for 2 hrs.

Remove cover & cook for 15 minutes.
